The holidays demand pie. From the comforting favorite apple pie to the traditional pumpkin pie for Thanksgiving, pie and the holidays go together. If you’re looking to perfect your pie making technique and for inspiration for some new flavor sensations, join instructor John Michael Lerma to learn from a pro. His new cookbook, Garden County Pie, covers the pie spectrum from A to Z. He’s also a veteran of the Food Network’s National Pie Championship, so who better to guide us through the world of pie? John Michael will start with the basics of a PERFECT PIE CRUST. This foolproof recipe and technique tips will demystify crust making. Then we’ll use the crust to create three sweet and two savory pies. For sweets, we’ll make CHOCOLATE CARAMEL BANANA PIE, HONEY PECAN PIE and CARAMEL APPLE PIE. Any of these would be a great addition to the holiday table. We’ll also make SAGE SAUSAGE PIE and MY, OH MY, MUSHROOM PIE. These two pies are great on a buffet table or as part of a holiday brunch menu. Expand your pie knowledge and your recipe files with the king of pies.

With a few staples in your pantry, these noshes are also great standbys for unexpected guests. FRIED WONTONS FILLED WITH BRIE AND BACON combine worlds of flavor. ONION RINGS IN CURRIED BEER BATTER are perfect with an ice-cold brew. HUMMUS IN RED PEPPER SHELLS looks as good as it tastes and is wonderful when scooped up with CRISPY THIN HOMEMADE CRACKERS. Author and Chef John Michael Lerma will help you prepare one of a kind pasta dishes that will be the highlight of your buffet or a centerpiece of your holiday dinner party. The class starts with a lesson in making HOMEMADE EGG PASTA. Then we’ll move on to use the pasta to make a variety of pasta dishes. First up is CANNELLONI RIPIENI DI CARNE, cannelloni stuffed with meat. Then we’ll prepare two dishes using spaghetti: SPAGHETTI CON VODKA E CAVIALE, spaghetti with vodka and caviar; and SPAGHETTI CARTOCCIO, baked seafood spaghetti. Next on the menu is GNOCCHI AL GORGONZOLA, gnocchi with Gorgonzola sauce. There’s also FETTUCCINE AL PESTO DI NOCCIOLE, fettuccine with hazelnut pesto. And finally, RAVIOLI RIPIENI DI MAGRO, ravioli with ricotta and spinach. These tasty pasta preparations will liven up your dinner table well into the New Year.
